Roast Chicken

I am going to share one of my favorite kitchen gadgets.....a cast iron chicken roaster.
I love roasting chicken in this. It makes it so easy and so delicious.
I use sea salt, garlic powder and Olde Virden's Red Hot Sprinkle and mix it in a bowl. I don't measure it, I just do it to taste. You want to mix enough to rub it all over the chicken.
I put it in the oven on 350º for a couple of hours. You want your chicken to

reach an internal temperature of 165º if you are using a meat thermometer, or the juice to flow clear. After the chicken has finished cooking let it rest for 30  minutes. Then serve.

We like to cook a chicken and use the meat over the next few days. We add it to our scrambled eggs in the morning, put it on a salad for lunch, or serve with our favorite veggie for dinner. This roasting dish makes it super easy.
