2 pounds roaster potatoes
3 Tbls olive oil
1 1/2 tsp kosher salt
1/4 tsp Olde Virden's Red Hot Sprinkle
1 cup grated parmesan cheese
Preheat oven to 400º F. Wash potatoes and cut into quarters lengthwise. In a large bowl, combine remaining ingredients. Add the potatoes and toss to coat.
Spread in an even layer on a baking sheet and place in oven. Roast for approximately 45 minutes, turning once, until the potatoes are golden brown and crisp. Sprinkle more Olde Virden's on top of finished potatoes to add a little more heat and color. Makes 4-6 servings.
