Olde Virden's Spicy Cheddar Crust Bacon Quiche

                                                                                                     350° - 8 servings

This recipe was the result of a "happy mistake".  I was making the dough for our famous spicy cheese bites and instead of using self rising flour, I grabbed the all purpose flour. It took me making 10 pounds of dough to realize what I had done. Being the foodies we are, Olde Virden and I, quickly started naming off different recipes we could make with a spicy pie dough. Quiche was high on the list. If you are feeling adventurous, add onions, peppers, and mushrooms to the filling. The bacon can be substituted for any of your favorite quiche fillings.

 

Dough:

2 sticks butter

2 cups sharp cheddar cheese -  use block cheese, not pre- shredded

2 cups all purpose flour

dash of salt

1 tsp. Olde Virden's Red Hot Sprinkle

 

Filling:

4 slices cooked bacon, chopped

3 eggs

1 cup half and half

2 tsp all-purpose flour

4 slices swiss cheese

1/3 cup shredded cheddar cheese

salt and pepper to taste

 

Pie Crust:

 Bring the butter and cheese to room temperature.

Grate the cheese

Add the butter and cheese to the mixer. Mix until nice and creamy

 Sift the flour, salt, and OV's into the mixing bowl. Blend until a nice dough forms.

Store in fridge until your filling is made.


Roll the out the dough and place in pie pan.

Place swiss cheese around the bottom of the crust

In a bowl, mix eggs, half & half, flour, chopped bacon,  salt, pepper, and cheddar cheese. Pour into pie crust.

Cook 1 hour until quiche is set in the middle.

Let stand 5 minutes.

Cut and serve
