4 boneless, skinless chicken breasts
2 Tbl butter
1 Tbl olive oil
2 tsp garlic powder
5 Tbl lime juice
3/4 tsp salt
1/2 tsp Olde Virden's Red Hot Sprinkle
1/8 tsp paprika
1/4 tsp garlic powder
1/8 tsp onion powder
1/4 tsp dried thyme
1/4 tsp dried parsley
Prepare the rub: In a small bowl, mix together salt, OVRHS, paprika, garlic powder, onion powder, thyme, and parsley. Sprinkle the rub generously on both sides of the chicken.
Heat butter and oil in a large, heavy skillet over medium heat. Add the chicken and saute until golden brown, about 6 minutes on each side.
Sprinkle with garlic powder and lime juice. Cook for another 5 minutes, stirring frequently to coat evenly with sauce. Makes 4 servings.
